What is the best varnish for the best finish on oak doors, doorliner, architrave, etc retaining the original colour for the best possible finish?

I'd go to to a Dulux Decorator centre and get some Dulux clear oil based varnish.

Can't say I've seen oil based varnish yellow...it brings out the natural colour of the wood, whereas a water based would not.
 
However....just re-read your original post.

The oil based varnish would slightly deepen your wood.. whereas the water based would not.

But in my opinion..... The best possible finish (that you ask for) would be oil based.

Yep I agree there..

Oil does bring out the colour and grain of a wood and water based stuff does tend to leave it a little bit 'washed out' looking..

However the wood will dark by itself eventually as water based varnish does not (correct me here if im wrong) have U.V filters in it.

There is an alternative...white oil varnish, used to use it a lot over the top of rag rolling to protect it and keep the risk of yellowing to a minimum.
