We have noticed a gradual build up of ice in the fridge compartment and now everything is completely frozen in the fridge and the motor appears to be constantly on.

Our initial thought is that it is likely to be the thermostat.

Is is a reasonable assumption? If so how is it changed?

Thanks, in anticipation.

I'd check the door seal first. If your appliance is in the kitchen, then it can let the warm, humid air into the fridge causing the compressor to run continously and excessive ice to build up.

Check the seal for damage. A good check is to trap a piece of paper in the seal; there should be some resistance when you pull it out.
