How many coats?

I'm staining some skirting\windows & a new door using sadolin classic & extra. A decorator I had round to do some other work did tell me how many coats to use, but I've forgotten.

Is it usually:
2 coats classic, then 1 coat extra.

Or the other way round? On the new, untreated wood would it probably take another coat of classic?

Also, there is some previous overpaint of emulsion on the skirting & it didn't come off too easily with sand paper. Would sadolin cover this (eventually) or will it still show through after 3 coats?

If I need to remove the overpaint, what's the best way?
