How to seal bottom of chimney in kitchen

I have had an old boiler removed from the chimney breast in the kitchen, however there is now a rectangular gap where the old asbestos panel used to be.

Can i cover this gap with cement board or fireproof plasterboard?

A cooker will likely go in the chimney breast, and the vertical gap between the gap and where the hob would be will be around 70cm.
