Insinkerator Air Switch Location

Wasn't sure where to post this as it's not an electrical or plumbing issue where most waste disposal posts end up

I have an insinkerator bought for our new kitchen install (that starts on Monday). My problem is locating the air switch. Mrs Tet does not want to have a hole drilled in the quartz to accomodate an (admittedly) plasticky switch. Does anyone have any experience of or suggestions locating an air switch elsewhere?

Assuming it is a pneumatic switch it might work with a foot switch recessed into the plinth below the sink.

I have fitted them in the cupboard under the sink before, as you open the door I have put a piece of timber and fitted it there.
