Insulating a stone wall

Hi, I would really appreciate some advice regarding insulating a gable end stone wall, i have two issues -

There is a very large redundant chimney which has been bricked up but the wall was freezing in the winter, there is no air vent thank god!

To the right of the chimney there is a built in cupboard which was sheeted over and not used. I have just discovered that the lining of the cupboard has been removed, the only thing between the outside wall is a sheet of 9mm plasterboard.

What is the best solution to insulating both chimney and disused cupboard ?

All helpful advice much appreciated.
