Internal wall insulation - to remove old plaster....

Hi all.

An extension section of our kitchen is mostly single skin solid sandstone/mortar with plaster(possibly paster board?) right against the mortar. I'd like to internally insulate the wall using something like the celotex insulated plasterboard.

I'm wondering if it's ok to fix new studs over the existing plasterwork then fastening the new board over that - or if we'll need to pull back the existing plaster. I'm happy to loose a few cm of space. But want to get it correct for future damp/humidity issues.

Photo shows the bay window bit, we look window sill off to see wall. Have a plumber coming soon to fit a few new radiator, and will get that fixed to give space for the celotex/stud.

Additionally there's a couple of electric sockets - so I assume there's some space for cables in there somewhere - i'm hoping I can just pull these forward and fix until the new insulated plasterboard.

Thoughts/advice welcome
