Pea foamI did a Food Technology course in the 80s which covered everything about the food industry from food science and chemistry, microbiology, dairy, baking, butchery, all kinds of cookery and all the maths, stats and industrial processes, machinery etc, I appreciate food and enjoy cooking.....
BUT....I can't stand all this poncy art on a plate cr@p.
Yes, it has to look appetising, and if course it has to taste good.
But you don't have to mess about with 100 different ingredients from freeze dried snake's scrotum to liquidised worm's tongues on a bed of rocking horse hoof shavings.
AND then serve it in a tiny portion.
Just good honest food that looks good and tastes great.
I would like to go into one of those fancy restaurants and when they read the menu out to me ask "Do I get chips with that"
