We currently have laminate flooring in the house we bought, but dislike the colour. Is it possible to lay new laminate flooring directly over the top of the old with the underlay between?

You might find the floor feels a bit too "squishy" i.e. it will have too much give when you walk on it. Worst case your flooring could end up not particularly flat. I would say "rip up the old stuff".

By removing the old stuff you won't have to plane the bottoms of the doors to fit over the extra flooring thickness. A much more irritating job than removing old laminate.
