I'm looking to increase the opening for the loft door, currently it's fitted with a standard size 540x540mm insulated door, I'd like to install a drop down ladder/door 1190x690mm but in order to do this I'd need to cut thru 2 rafter beams (fitting it along the beam direction is not possible as the landing is not wide enough), is this possible and safe?

Yes it is possible i have fitted many. You need to fit a support beam accross these two joists then cut through them leaving leaving enough room to fit a stringer either side. if you are still conserned there is a possibilty you can fit a brace back up to the rafters on one side, this also serves as a useful handrail attachment for easier access and egress.
