I worked with a friend years ago, he needed to fill in some deep holes, so he said I'll mix up some merlin, this was a combination of basecoat plaster and cement...............It was great, went off in about 15 mins and rock hard. Is it something all you pro's use or does it have drawbacks?

I some times throw some cement in with my bonding if I want it to go off quick so I can skim it straight away....There are lots of ways to "skim" a cat..... ;)

When working as a jobbing bricklayer in the past I have put a handfull of board finish into the mortar mix to harden it up really quick when needed.
According to the boffins at BRE this mixture can induce a sulphate attack in the mortar joints in damp conditions. It should take a couple of years to come out, so there is enough time for the cheque to clear.
