As a decorator, I've used to get a little confused as to why some doors state this on their instructions but after a little research it seems that many door manufacturers just don't accept oils, waxes, polishes etc as a suitable means of sealing the timber against moisture issues.
I don't think there is a specific reason why you can't actually use them other than the fact that any problems encountered will not be covered by the manufacturer's warranty. (I stand to be corrected on that, though! )

All the methods suggested by PBSCO are suitable means of sealing the doors. As for recommended stains/varnishes, you won't go wrong with the product(s) suggested in this LINK.
The Sikkens products shown are for exterior use but you can use the interior range. SIKKENS

she is going to buy some clear satin varnish for it, the door is for a kitchen.
