Newbie with an old flue!

Hi: I've just moved into a house in which there is an old flue which is redundant.

The previous owner removed the old gas heaters from which this particular flue went straight through the outside stone wall on which it was mounted, and rather than make good the hole he simply filled the flue with carrier bags!!!

I'm afraid I'm clueless as to what to do - is there something that is designed to seal off redundant flues? Should I ask a builder to come fill in the external hole? What can I do to the internal stone surface? I think this hole is a bit big (5-6 inch diameter) for expanding foam!!

I'm not against doing this myself but I am, as mentioned, new to this DIY game.

Any advice please.
