Planning a new decking

Hi all, I’m looking to replace my existing decking which is a floating construction on slabs in my garden with a wooden subframe and composite deck panels. I’m struggling to decide how to go about the height of my new joists and approach to take to meet my new lowered bi fold doors which the existing decking needed to be cut out at the time to accommodate. When we renovated the house and kitchen we lowered the doors to reduce the ‘step out’ from both rooms (almost wish I hadn’t bothered now!) The current slabs are fixed by concrete and would be a good foundation for a new wood sub base but I can’t decide the height to go for and whether I should try to go over the bi fold ledge or up to it. Conscious any overhang with composite is limited to 20mm.
