When using self-adhesive tape to cover joints, do you still need to apply a filling mix before and after applying tape or is self adhesive a way of not using a joint compound?

You still need to fill the joint after taping! The tapes purpose is to prevent cracking after filling.
The boards should be tapered edges as well.

i was told not to use taper board but square edge by several people

Square edged boards if you are skimming.

Ok apologies i thought you were just taping and filling the joints

You wont need to do any prep then! just tape then a couple of coats of skim.
