Plasterboard ceiling

I am intending on taking down the ceiling in an eaves bedroom. it is lathe and plast and has a number of undulations. I will put insulation between the rafters and then plasterboard. I'm wondering if I use tapered board will I need to skim the ceiling other than the joints? How good a finish will I get if I just paint onto the plasterboard without skimming?

Skimming is best but you could try filling the joins and screw heads and lining before painting

gives a nice finish
