I have fiixed 60mmm insulated p/b to walls but due to the sloping ceiling there is a 75mm gap(should have cut angle on top of p/b ).I have filled the gap with expanding foam and then raked it back an inch from p/b level.Do I now fill this with bonding plaster or is something else a better job?(I intend to scrim + skim over).

From what's been posted before on here it seems you could just cut the foam back flush, scrim it and skim it.
I haven't tried it myself, yet.

bonding would do for me, if you leave it for the next day before you skim seal it up with a coat of pva, have a read of other posts on using pva.
