protecting exposed birch ply edges

Hi,
I've built some bathroom cabinets out of birch plywood and wood like to seal/oil the interior faces and also the exposed edges. I'm hoping that the 'stripey' edges will look strong and distinctive whilst the interior faces just need protecting. Can I use some kind of oil, or is there a better product to use?

Danish oil or kitchen worktop oil or even a clear varnish.
