Gotta put some ply down ready for lino. Skirting is already in place and chances are it'll be very difficult to scribe the ply perfectly so if there is any gaps round the edges, what the best thing to fill it with? sand and cement?

The same as with laminate flooring you do not want a dead fit, you need to allow for a small amount of expansion. 3mm is not a lot and you do not stand that close to the wall.

I was thinking more as it was being fitted. If there's a channel round the sides the fitter is going to struggle no?

wbp plywood can be fitted net if fixed correct/acclimatised. To fill joints and nail/screw heads you need a feather finish compound.
