PV's and excess power

I am just about to have PV panels fitted, and instead of feeding back excess electricity to the providers I want to use this to heat the DHW.
At the moment I have a 8yr old combi, which I intend to replace with one of the Worcester range (Greenstar Regular or System Boiler ? )) the old airing cupboard still exists (for the new HWC) and there is plenty space in the loft for header and cold water tanks (just as I had in the old days when I had a Back Boiler
My main concern are : will I (or the heating engineer I should say) be able to run all water outlets (taps, toilet, shower) continue to use the 'mains supply as at present, which gives me an adequate' shower head' the reason being that I now have ceramic floor tiles fitted to the Bathroom and Kitchen and I think I could run into problems if this is not possible, apart from excessive cost
Even if I fitted a new combi boiler I would still need a HWC new pipework,and probably other things! which I have not considered)

provided you have good flow, you couls fit a pressurised cylinder such as a megaflo

you can have an immersion heater in it.

Install an unvented cylinder and use the immersion in it to heat it.
You can then use your existing combi to heat the cylinder up to temperature if you run out of sun.
Don't need header tanks etc and you can keep your existing boiler.
