Question about plasterboarding a ceiling

Hi all

Have just took down the ceiling in a room that had coving fitted.

The plan is to re-board the ceiling with new, however there are gaps at the top of the wall plasterboard which was behind the coving.

we would like the whole room replastered but are not wanting to put coving back. What would be the best option? Double board the ceiling?

I took down all of my downstairs ceiling and fitted loft insulation between the joists then double boarded the ceiling and skimmed.
Perfect ceiling with no noise transfer from downstairs to upstairs. So re-board to the edge.

I will have to measure up and hope the boarding is thick enough to cover the vertical gaps. It is going to be a music room so more thickness the better
