Rake out between 8-12mm of the joint.
No need to wet down while raking out with using a hammer and chisel or old screwdriver,
if the jobs a big one a 110-125mm angle grinder with a raking out disc may speed things up, but be careful if you have never done this before as the disc could stray and damage your brickwork.
The usual mortar for repointing is either a 6:1:1 mix of builders sand/hydrated lime/cement or a 3:1 mix of sharp sand/hydrated lime. Measure the amounts carefully so that each batch will set to a consistent colouring.

thx for the quick reply, what does the hydrated lime do? ive read on some posts say use a plasticiser, would it be of any use?

someone has offered to sell me a pointing gun, it looks like a silicon gun just a bit bigger, has anyone used one are they any good?

will it be ok to use jewsons building sand and ordinary portland cement, or would you recomend using something else?

If you use a simple sand/cement mix water willl trap in the wall and any cold weather frost will loosen it.
It also tends to set too quickly and creates weak bonds to the bricks.
