Can you pull plastic pipe out of one end of a speed fit fitting and push copper back in. Or is it best to replace the fitting.

Nope the fitting has a grab ring , you cant pull the old pipe out, just replace the fitting

You hold the fitting, push the thin collar towards the fitting and the pipe should slide out. (I say SHOULD. Sometimes it likes to play with you. 
)
The new pipe 'should' slide in and grip but give it a really good tug to make sure.
If they are twist - lock ones, you obviously have to unlock them first before doing the above.
