When filling in a form which asks ref method, what would you put for say T&E in lighting circuit in domestic situation? As it runs through plastered wall and switches then above insulation in ceiling, so has two ref methods in my opinion. So in other situations it could have numerous ref methods. Is there a simple solution to this?

Using the method that effects the circuit/cable the most, then you are on the safe side. Let's face it, how many letters can you get in that tiny box ?
