Reflashing a chimney - guide?

Hello.
I am in the process of rebuilding a chimney stack which straddles the apex of my roof. The old stack is down, but the lead flashing was in poor condition, so I've decided to redo it while i've got the scaffolding up.

The only bit I'm not sure about is how to cut the stepped side flashings. Can anybody suggest a guide (with pictures) that I could find on line please.
