Replacing sink/taps/units - need to cap off supply

Hi

Im about to replace my kitchen sink/units etc and will be turning off water supply. The taps are connected to standard 15mm copper piping via flexible hoses. Is there anything that I can 'cap off' the copper pipes while I work so I can restore the supply?

Or is it easier to fit a couple of 15mm isolating valves close by and use them instead? (There is no other way to isolate the supply I can see)

Isolating valves are a good idea because you can easily re-instate the water if you need it. A kitchen can be a long job so fit a flexi on the end of the valve so you can fill the kettle.
