Ridge Tiles

Just about to put the ridge tiles on the roof and have a question. How much gap between ridge tiles and how do you stop the cement from falling down the gap between the curve of the ridge tiles. ( tiles are marley modern)

10mm joint, and use some broken tile pieces to bridge across from the top of the tiles on each pitch
