My plasterer has put up sound board plasterboard (ie much heavier than standard plasterboard) and has used much fewer screws than I was expecting. Approx 20 per board (2400 x 1200) - occasional screw is also slightly too far in. Unfortunately he plastered before I noticed and have only spotted this on the photos (i was preoccupied with the gaps and damage). I am wondering if this is safe or will I be risking pieces of the ceiling falling down.

No will be fine.
Fire board is much stronger. Screws won't pull through. Screws should have been pulled in below surface.
Standard board would hold up with about 4 screws as I've done that while struggling a bit over the years 100s of times.
Obviously I added more screws.

I don't think you need to worry
