Roof insulation

ive been searching around and can't find an answer for this.

I'm insulation between rafters in vaulted ceiling. Do most folks install the celotex without a cut to the top triangle, or cut it to the roof pitch so that it maintains thickness?

I know the best way is probably to cut it but my ceiling is 6.2m high and I'm finding it hard to get it installed.

You should, whether other do it no idea, I would.
Cut that bit first, you'll know the pitch of your roof so either do that or a little sharper and fill the gap.
6.2m ceilings you need a tower anyway.
 
You want to maintain the thickness of the insluation throughout, otherwise you'll get cold spots. You'll cut it at an angle on every change in direction, in order to maintain it's depth.
 
The sensible way would be to put some collars in and bring the ceiling down a bit.
