screwing composite doorframe into cavity advice

I am fitting a composite door and needed to take some bricks out as I wanted a wider door entrance .
Can I finish the bricks as

in the this photo ( tie brick to inner wall) as this will bridge the cavity gap and enable me to get a good strong fixing into the brick otherwise I will be screwing into an empty cavity space . I know I could wedge in blocks of wood into the cavity but I need a stronger fixing than that .Also would damp / water ingress travel the whole length of the brick and penetrate the inner wall fitting the bricks this way .Any tips greatly appreciated

this is the opposite side and I want the new composite door and frame to finish in the same existing position
