what I want doing is the to knock down the two walls in the middle of the shed
to remove the midlle room so it is one big shed, and I will brick up the doors on the
left and right side of the shed, leaving the middle to gain access.

Concrete roofs can be dangerous to work with, it may not need any supporting elements or it may need them where you have removed the walls.
Have you thought about getting rid of it and putting a new roof on?
