Sink sizing issue - advice req

Long story but we have had to change our sink (in a previous post) because our quartz worktop guy suggested that the one we had was too big so we have now opted to looking at an Inset stainless steel sink but we are trying to just work out our sizing because it seems we can't seem to fit a standard height 440mm (400mm cutout) sink in our unit, width and depth isn't really an issue as it is a 1000mm wide unit.

Our tap is 55mm radius which i've given 60mm.

It seems most/all 700mm wide sinks are 440mm width and require a cut-out anywhere from 400-410mm when doing inset/topmount (as shown below)

But at 440mm it will mean the non-inset part would be resting on the worktop overhang by about 10mm, we are actually having a 40mm overhang on our worktops anyways so dont think it would look too out of place. But is the above even do-able? I just thought there would be no point me looking at this sizing of sink's if it wasn't even possible.

ideally we would have a 700-800mm wide sink with a height of 400mm and cut-out height of 360mm but cannot seem to find anything of this sizing? Thank for any advice in advance

If you really want a sink that size and can't find one it's possible to have one made .
Not unusual stuff in commercial kitchens.
We use Pland stainless at Leeds long established company.
