Skim or plasterboard

I'm renovating my kitchen and there is wallpaper and wood chip paper all over the walls and ceilings. This will need to come off if i skim the walls, however I really don't think I can muster the effort to take all this off. Can I just board over the walls? See pic

You could however won't you have the radiator, skirtings, that socket and the remaining door architrave etc to mess with? Woodchip's often not that bad, peel the woodchip layer off then damp down the bit left and it often comes off OK.
 
Wickes plastic sheets taped to skirting as they are a good quality.
Wallpaper scraper. Knock off wood chips by scrapping. Spray water twice over a 30mins period then steam off.
Get a system going so water starts to loosen paper before steaming.
I don't mind removing wood chip paper if i can make it easy and crack on.
If you start to struggle with no system, it's going to be hard going.

Hopefully you are familiar with electric steamers - they make the job a lot easier in my experience.
