Solder fittings to boiler

I’m re plumbing the kitchen and need to resolder the cold and hot water outlets to the boiler. Do you leave the fittings connected while soldering or you remove and then re attach? I’m wondering if the water valve might get damaged.

Unscrew the nut and take any washer out before applying heat.
