Historically one system that worked well was to use "Ash Deafening" between the Joists
Timber battens were fixed to the sides of the Joists, any old scrap timber was used to support the Ash which was placed on top of the scrap timber boards.
Modern alternate is something like "Quietex" suggest you consider a look at there site? for some ideas, loose fill or in bags.
There are modern Batts but as far as I am concerned mass / weight will act as a sound deafening better than Batts.
