Strip Foundation fill

Hey guys,

Digging a foundation for porch, spoke to LABC who stated 1m deep and 600mm wide for double wall. regarding the depth of concrete, I have been told I should do min 300mm. Question is can I actually fill greater than this, ie 600mm then use less bricks to get to ground level?
Also what's the best concrete mix to get?

Yes, often done as its easier to pour more than fiddle about down a trench.
C20 concrete which is what 4:2:1.. agg:sand:cement mix..
 
We have chucked ridiculous amounts of concrete depth in - 1200mm, 1500mm even 2100mm deep!!!

Call me daft if I have this wrong.
But regarding the gap between the engineering bricks up to the DPC - what do I fill the gap with in between them, concretete?
As above the DPC the gap will be filled with celotex?
