Cheers. I’ll get a tap or spout or something and fart about with washers. Could cut a hole, and then mount some firm plastic inside that hole with gasket sealant or similar so I have a flat mounting surface.

The washers will be all you need - the plastic butt, will become flat, as you tighten the connection.

Search ebay for 'water butt tap' and you will find sets with all the parts you need.
You can fit a 800 litre water butt, I have the same model to collet water:
