I am trying to fit a Tapmate Lyon single hole mixer tap to a worktop. Each time I fasten the single stud & nut, the swivel action locks and the tap will not move. If I slacken the securing nut, the complete tap assembly moves when I try to swivel it. What am I doing wrong ??

I believe the swivel is held together by a locking ring that also forms the seating against the worktop. When you tighten the fixing bolt it takes up the clearance on the thread of the ring. Try slackening off the base of the tap a small fraction of a turn, and re-fitting.
Bit of trial and error required. unscrew the base too far, and the spout may leak. Too tight, and the spout won't turn when the fixing bolt is done up, as you have found.
