Tee off incoming supply...

Hello all, the missus has bought an American fridge freezer, which need connecting to a water supply. Conveniently situated the other side of the kitchen wall to where the fridge needs to go is the mains inlet/meter to the house.

I was thinking that I could tee off the incoming pipe (above the meter obviously), drill a hole through the wall and supply it that way.

Clearly I would turn off the mains tap first, but how do I stop water flowing back down from the other side of the cut? Or do I just have to be quick and have a mop handy? Any advice? I'm perfectly capable of doing something stupid, so any tips gratefully received...

Mains off. Open all cold taps (mains fed ones). Wait for taps to stop. Towels and mop at the ready! That's it :).
