I was looking online for some telephone cable to connect to an existing cable and extend it to a further location within my house.

I would just have assumed that there would be a standard type of cable for extending domestic telephone cables, though I have noticed versions of 2 pair, 4 wire and 3 pair, 6 wire.

I'm not sure why there's these different versions, it would be interesting to know why. I presume I just look for what I currently have and obtain the same for the extension cable?

One pair = one phone line.
Multiple pairs = multiple lines.

Some older internal wiring made use of 3 wires for phones which required a separate ring signal to be derived at the master socket. Most modern phones do not need this.

I've purchased a new telephone cable which has four internal wires.

I've noticed the old wire has six internal wires.

Is the new four-wire cable okay for use with a modern 'phone in addition to receiving an internet connection?

Or do I need a six-wire cable, same as the old one?

Be careful what cable you buy. You can end up with copper-clad aluminium which is next to useless. Only buy CW1308 pure copper cable from a reputable source such as TLC Direct, CEF or suchlike. This is one case where E-Bay and Amazon are not necessarily your friends
