Ive got a conservatory with a slightly raised manhole cover in the room! anyone got any ideas on the best way to level it before laying tiles on a level with it

Your manhole should have a double seal frame and lid - does it?
If you get one then you'll see that you can tile over the lid such that only the rim of the frame and lid, and the securing screws, will be visible.
Either way, you need to remove and refit the frame to make the finished height at the same level as your finished floor level.
