Varnish issue

Hi there,
My major dilema is ;),
Ive just about finished renovating my house, Its now time to decorate. All of my wood work needs to be repainted, I dont want to have to re-gloss all the wood work.
What does everyone think i should do, As ive being told i have to strip back all the old gloss & then undercoat & Gloss new.
I was told about varnish?

Sorry for the daft question, Its all very much new to me.

You dont have to strip off old gloss, just abrade back to a sound surface, fill where necessary and spot prime bare timber, then u/c and gloss.

You would only ever varnish/stain bare timber
