Also when using new copper do you still wire wool the pipe before
fluxing?

Sometimes depends on the flux. Fluxes like Laco, Powerflow and Everflux are acidic and self-cleaning. You can get away without being too fussy about cleaning pipe and inside fitting. Templers, Yorkshire Traditional and Fluxite are grease based and less aggressive with copper and other materials, but need cleaner copper for a good joint.
