What insulation should be used in the floor voids? The spec states '150mm mineral wool' and I can't get hold of the building inspection.

Can I use Loft roll? E.g. Rockwool?

Same question again, what should be used in the studwork? Spec states '50mm insulation quilt'.

I presume not cavity insulation & loft insulation doesn't come that thin. So what exactly am I looking for?

Is this a ground floor? (If it's not a ground floor, you should consider a product with good acoustic as well as thermal properties.)

Your choice is roll or slabs. If you're lucky you'll find something that is the right width to fit between your joists; if not you'll have to cut it to fit.

Rockwool Flexi slabs are supposed to be available in 140 x 400 x 1200mm which might be what you need.

Lots of products are available. They are all pretty good. The main differences are cost, availability and in some cases how friendly they are to fit i.e. are they "soft" or "scratchy" to the touch.
