What types of matting for my floor

My open plan kitchen floor is concrete - lots of gouges in it where old tiles have been removed so I think it will need levelling again somehow.
I then plan to use underfloor heating mats

What do I need to include in my costings? Fracture mat? Ditra mat? insulation for the UFH? Reflection for the UFH?

I am quite confused as to what is around?
