What wire strippers do i need for 3 core (1cm+) wire?

That's a damp proofing wire, and I know about those (be they snake oil or otherwise!). A "damp-proof installation cable" is presumably very different from that, but I have no idea what it is.
Apologies, I stand corrected.

Me thinks you need to visit a specialist Electrical dealers such as CEF as listed in @opps response above and ask there. Yes it may cost a little more but I believe you will have a better chance of obtaining exactly what you require.

I suspect the DIY shop person you asked mistook your up to 1.5cm request for 1.5mm.

I use one of the ones you rotate around the round cable daily.
Works very well although you do need to adjust the blade depth on a scrap piece to ensure you are not cutting into the inner cores as not all insulated round cables have the same thickness insulation.

Possibly Artic flex, the yellow and blue stuff used for festoon and stuff outdoors
... and which I use for garden tools etc. :-)

However, as I've said, I really think that 'damp-proof' must be a mis-translation of something, since it would make absolutely no sense (and would be very dangerous) for any electrical cable not to be 'damp proof', wouldn't it?

Try squashing the wire a bit with pliers before you put it in your FatMax stripper..

Is damp proof cable one that has a hole drilled every 6" and filled with silicon fluid like they do on old houses?

No, it's 'electrical', involving current (I presume at ELV, given that the wire is bare) going through the conductor, allegedly resulting in some sort of osmosis (or reverse osmosis) in the wall. It sounds very much like snake oil to me, but I may be wrong!

What exactly is a "damp-proof installation cable" ? :-)
Seems more of a European thing which is why it's on the Knipex website. It gives an example of NYM cables, copy and pasted from a Google search:

NYM cable (NYM-J/NYM-O) is a standard, versatile sheathed PVC electrical installation cable widely used in Europe for fixed wiring in homes, commercial buildings, and light industry, suitable for power and lighting, installable in/on/under plaster, concrete, brickwork, and in dry/damp/wet areas, but must be UV-protected outdoors and kept out of direct compacted concrete. It features solid or stranded copper conductors with PVC insulation, a grey PVC sheath, and includes a green/yellow earth core (NYM-J) or not (NYM-O).

Key Features & Uses
Versatile Installation: Can be run on surfaces, embedded in walls, or under plaster in dry, damp, or wet conditions.
Durability: Robust PVC construction offers protection for fixed installations.
Safety: Includes a green/yellow earth core (NYM-J) for safety, connecting to sockets, switches, and lights.
Not for All Environments: Cannot be directly embedded in vibrated concrete and requires UV protection if exposed to direct sunlight outdoors.
Voltage Rating: Typically 300/500V.
Types
NYM-J: Includes a green/yellow protective conductor (earth wire).
NYM-O: Does not have a green/yellow core.
Applications
Power and lighting circuits in residential buildings.
Commercial and industrial premises.
Temporary construction site installations.
Connecting appliances to mains supply.

I use one similar to this:

Works very well, although there is a chap at work with Reynards so he says he cannot use it and uses what appears to be a coax cable stripper instead as it has a ring on the end and so makes it easier for him

Fair enough, but as I have said, there surely is not (can not) be any type of cable designed for use at LV which is NOT "damp-proof", is there?
