What's the best way to point a single row sett border?

We have embarked on our first garden DIY project.

The plan is to lay a gavel patio and path edged with a single row of 100x100x50 sandstone setts (about 30 metres in total). Either side of the gravel patio/path will be flower beds and grass (so beds - setts - gravel - setts - lawn). My question regards pointing the setts (12mm gap).

Q1. Is a 3-1 mortar mix, which will lighten up with the sun a good idea? As we will be doing this over several days should I be concerned that the colour will be inconsistent?

Q2. Should we use a dye in the mix?

Q3. I like the idea of using a jointing compound as the colour will be consistent and there is no mixing involved. However, with a single row of setts how do we apply it with out it all brushing out?
