Will my water need to be off for a long time?

I am looking to get a new kitchen sink and taps. The mains water comes out of the floor underneath the sink and feeds the cold tap and there is also a feed to a cold water cistern in the roof. For hot water I have a non-condensing boiler and a water tank that has hot water in it. I don't have isolator valves underneath the sink.

Is it likely that when the plumber disconnects the sink he will be able to arrange things so that everything else in my house works except the hot and cold supply to my sink? I know this is an "it all depends" answer, but what are the chances?

Without a doubt, if he actually is a plumber of course :ROFLMAO:

If you're lucky there's already ISO valves on the sink feeds, so they're turned off and it's done. If not then it's Isolate mains - drain down - cut below the feeds to the sink - couple of stop ends/ISO's - done. As suggested it's done in mins.
 
There aren't any isolation valves, but I will make sure some are fitted....

He is defo a plumber, local old school guy who has done other work for me. Not thinking of doing it myself.
