Hi

The son in law has a small resturant where I help out with jobs. His kitchen has what looks like gloss paint on the walls that has yellowed and needs repainting.

Questions:

Is it a 'special' paint for such applications?
What's the proper name for it?
What is adequate prep for painting it?
Can it be rolled on?

Thanks.

If he needs a paint that is very durable and can be applied without stinking for ages then perhaps consider Zinsser BIN. It is an alcohol based shellac paint that can be tinted. The smell goes within an hour or two and it can be repainted after about 50 minutes. From memory, complete cure time is about 2 or 4 days which is much quicker than waterbased paints.

It will stick to most surfaces but if the walls are very greasy you will need to clean them first.

Brushes and rollers can be cleaned using regular household ammonia. You will not be able to use cheap foam based rollers though. The alcohol seems to expand the foam on the rollers and they double in size and become floppy.

No it wont. Because its a commercial kitchen you have to be careful what you use. Tikkurila have a range of products that are good for hygene areas, Tikkurila Luja Semi - Matt 20 which is an Acrylic eggshell would fit the bill.
