Wood-stoves: types of flue

Apart from aesthetics and cost, can anyone tell me if there is a difference in operation between a single-skinned enamelled flue and a stainless-steel one ?

One kind of thing I'm wondering is if one or the other is more prone to soot/tar accumulation.

If there are any other pros/cons I\d be pleased to hear.
